Anzac biscuits


Off to visit some friends with children, and we are going to go for a picnic – so I have to bake something.

Just got Jo Wheatley’s new book – which I think is beautifully laid out and wonderful pictures (makes a real difference to me!) – and have already made a note of about 15 of her recipes to cook – a good sign for a quick flick through. So given this, I thought I would make her ANZAC biscuits – with the rolled oats and desicatted coconut it isn’t just pure sugar!

A simple recipe to follow – like a flapjack, you weigh out the dry ingredients (Plain flour, rolled oats and desiccated coconut) and separately melt the butter with the sugars (golden syrup & caster sugar) then combine before adding a tsp of bicarbonate of soda, which you mix with 1/2 tsp of warm water first. Once combined, shape into walnut sized balls and bake for 10 mins at 170C/Gas 3.

NOTE – do leave to cool for 5 minutes before transferring to a wire rack! Everyone loved them – children and adults alike and a good balance of sweetness – will definitely use this recipe again.
